Bidaian is a shopping beacon of rue Ulysse Darracq and the St Esprit district of Bayonne, despite all the national crises, it has been able to innovate, renew itself, develop. Like the reed that bends but does not break.... This strength, he applies it to his cooking too! Several times awarded for its delicatessen products, Epicures Argent 2020 and Epicures Or 2021 awards. He made me rediscover the Humous , or rather, discover it quite simply... Taste, flavor, perfumed... When I have to make tapas with its products, I have to rack my brains, thank you for making tapas for my guests, whose main ingredient is already self sufficient, while I want to enhance it visually in the colors and taste, without distorting the main garnish... A nice taste puzzle, I don 't thank you Mr. Bidaian for making me drool so much to be up to speed! : And I haven 't even tasted all of your products yet! His couscous, royal, with 3 or 4 meats, is in my top 3: 1 Tunisia, starred restaurant. 2 That of the mother of a great Moroccan friend (and what a chef! I learned a lot from her contact! 3 Bidaian I found the subtle flavors, the respectful cooking of the meats, but which is not suitable for everyone, especially for lovers of ultra braised and firm meats, because here it is soft and tender, the merguez is juicy, the chicken comes off on its own, the lamb is tender. The semolina and its vegetable broth is like a friendly raclette, I don 't know what 's going on, but I find it hard to stop taking it... The wine recommended by the manager was also perfectly suited, he knows his product, good wine is not cheap, but the prices are clear, and displayed without surprises. This couscous is the delight of local residents who order it to take away on a regular basis, or at the family table, it is rare that I cannot see one or more customers waiting for their orders at service hours. His oriental pastries visibly delight customers, I tasted them, I appreciated the quality, the crispy, the caramelized, the smoked, the aromas. However, I cannot have any objective opinion on this point. For me, a baker 's cheesecake is already 10x too sweet, (so I make it myself . So, an oriental pastry, whose roundness, sweetness, is the abundance of sugars, among other things, it would be like reproaching a Breton, for putting too much butter in his kouign amann ; It would not be objective, and dangerous for my health with respect to the Bretons that I love Breizh Forever , please do not type the messenger! ; So, based on my knowledge of these pastries, it 's compliant and delicious for amateurs, the palate is delighted! Go there with respect for his know how, you will also be welcomed there with the greatest respect, and as he likes to say. Have a nice and pleasant day!
Super friendly and very well the very welcoming boss I recommend
A hidden place shared by a friend. Small but a warm welcome and a very good cuckoo. I'll be back soon, without hesitation.
Cuckoo beautiful visually, hearty lack of vegetables that have no taste except that of the water(p'tit flat)bonne meats(especially kefta) pass a good time.. this makes me want to discover the tajine to the next order.. Thank you.
