The food was so good that we went back the second day. Don’t come to the Hyatt without visiting Corn Maiden, you will be missing out. The waitress, Vanya, was nice, attentive, and knowledgeable. This place is a gem in the desert.
Food was amazing. The corn bisque and the charred corn jalapeño margarita was die for. This place is a must visit when coming here.

Nestled within the serene and picturesque setting of the Hyatt Regency Tamaya, The Corn Maiden has recently reopened its doors, offering a fine dining experience that is nothing short of exceptional. As a traveling Italian cuisine culinary reviewer, I was delighted to explore the unique fusion of local flavors and high-quality ingredients that this restaurant has to offer. The Corn Maiden's commitment to sourcing locally grown ingredients is evident in every dish, and their limited menu is a testament to their focus on quality over quantity. One of the standout dishes was the succulent lobster meat, generously portioned and prepared to perfection with al dente pasta. Each bite was a harmonious blend of flavors, showcasing the freshness and richness of the lobster. Accompanying the main courses were the delightful homemade blue cornbread mini loaves, served with housemade peach jalapeño jam and creamy butter. The cornbread was a perfect balance of sweetness and spice, and the jam added a unique twist that elevated the entire dining experience. Another highlight was the large portion pork chop, which was cooked to perfection and served with a mini casserole dish of au gratin potatoes. The pork chop was tender and flavorful, and the au gratin potatoes were creamy and indulgent, making for a satisfying and hearty meal. The appetizers were equally impressive, with options such as the Sweet Corn Bisque, a rich and creamy soup with herb oil and freeze-dried corn, and the Crispy Green Chile Strips, featuring NM Hatch Green Chiles and a cilantro lime crema. These starters set the stage for the exceptional entrees that followed. The dining experience was further enhanced by the impeccable service provided by the two-person team. Their attention to detail and dedication to ensuring all needs were met did not go unnoticed. Frequent beverage refills and a warm, welcoming demeanor made the evening truly memorable.
