The duck is fattened in soy bean paste and, once dead, air is sent under the skin, then boiling water is filled. It is then coated with a honey-based liquid, then hanged by a drying hook, and once again coated with melace and toast. The skin, very fat, is cut first and cut into small pieces. The slices of the meat are cut, accompanied by small ultrafine pancakes here in a bamboo vapour. Then it is packed with toasted skin and a small piece of meat in a soy sauce and plum, then placed on the cake. We added the finely chopped pork and cucumber sticks or two before rolling the cake. We were specifically recommended to try Qianmen Quanjude 32 on Qianmen Street in Beijing. One must not leave Beijing without trying their famous Laqueado Pato, also known as Kaoya, which requires a complex preparation process. The traditional way to enjoy this dish is to start with the crispy skin served with corn flour pancakes, followed by the succulent meat and finally the soup. Despite the restaurant being very large, the staff are professionals who provide exceptional service, turning the dining experience into a ritual as they expertly carve the dish at your table. The round tables are set at two levels and rotate, allowing diners to share and sample a variety of dishes. This restaurant comes highly recommended for those visiting Beijing.
