Red Top Bbq Chili - Collinsville

I was really let down by my experience at Red Top, especially since I had heard positive things about it. Unfortunately, the food did not meet my expectations. The pulled pork was dry and stringy, and the pulled chicken had the same issue. Although the potato salad was homemade, the potatoes were undercooked and hard. The brisket nachos were a disappointment as well; the brisket was so dry and tough that I couldn’t cut it with a plastic knife. Overall, I won’t be returning. Rating: Food: 1, Service: 1, Atmosphere: 1 (Dine-in, Lunch, Price per person: $10–20).

Been working on and off on the building across the street and would periodically smell the bbq starting in the morning so had to give it a try. The food tastes even better than the smell. Pulled pork was done very well and the wings were cooked to absolute perfection with the spice building up which is great for wing enthusiasts. Will definitely be returning again and would recommend Red Top to anybody passing by in Collinsville if the smell of the place doesn’t bring you in on its own! My wife and I went on A Sunday afternoon. We both had the half slab of ribs special. The ribs seemed to be leftover from a previous day and reheated. The ribs were really dry. The flavor was ok but did not have a Smokey Flavor. The sides, baked beans, potato salad were just ok. I was really hoping for something better. I can’t recommend.
