Garden Of Vegan - Copper Mountain

I loved that Copper Mountain had a designated vegan area with several delicious vegan options

I hadn't visited Copper Mountain in a few years so I wasn't expecting much when I went to check out the offerings in the Grand Hall Food Court. Low and behold I find Garden of Vegan and all vegan food stall! And they cooked the food right there on a dedicated grill! It took a little long for our Lightlife Burgers $11) because of the line and there was ONLY one person working the stall. But it was so great to have options I didn't mind the wait. I will try one of the Cauli Rice bowls the next time I go to Copper.
