My wife and I both agreed that Fiola’s homemade pasta tasting menu was easily one of the best meals we’d ever had! We started with the… 1. Truffle Eggplant Bruschetta and Salmon Tartare with Black Caviar which was perfection. Then our tasting experience began with each course better than the last… 2. Triangoli spinach pasta vegetable soup 3. Raviolo Carbonara with Guanciale Culatello di Zibello 4. Saffron Calamarata Frutti di Mare 5. Kombucha (passion fruit) 6. Spaghetti with Truffles Parmesan Foam Truffle butter 7. Venison Cannelloni with Foie gras currants 8. Vin Santo Sorbeto (pre desert) 9. Monte Bianco white chocolate dessert with Candied Chestnuts. The pacing was perfect (about 10 minutes per course).This was truly a special dining experience! Food is amazing, the combination of flavors, how they play with different textures and the high quality of the ingredients, but I wanted to focus this review on something else. Having pasta Omakase (which is something the majority of other Italian restaurants don 't have) is a big bonus. For people who love food, there is an extra quote of adrenaline when you see this dedication. Great to see the chef coming out to spy on the customers ' reactions denotes that he really cares. We will be back!!!
