Basilic Bistrot - Coyhaique

I just got to Coyhaique and I've already had two meals here. I can't eat dairy and this is the best restaurant I've visited in Chile. Vegan chantilly cream, vegan chocolate mousse... I don't know how they do it but it's magic. I wish I could take this restaurant back to the US with me! Sorry about the photos, my spoon made it to the dishes before my camera did. Enjoy!

Very disappointed of this place. I expected maybe a bit too much. We took 2 fondos and none of them was well seasoned... Even the drink wasn't tasty...

After three weeks of traveling in Chile, we were craving something different from burgers and pizza. This restaurant was exactly what we were looking for. They had a diverse selection of delicious and unique dishes, and the service was excellent. We tried the tzatziki bowl and the spicy umami bowl, followed by the creme brulee and lemon pie. The creme brulee was especially delicious. The vegan lemon pie was a creative twist on a classic dessert and wasn't bad, but we preferred the creme brulee.

Best food I had in Chile hands down. I got 3 different meals here at various times including the vegan ramen, tzateki bowl, umami bowl, the purple smoothie, and the vegan fruit tartlet. Everything is super fresh and a little different from what you are used to the traditional dish being. The vegan tartlets are absolutely to die for probably one of the best vegan desserts I've ever had. This place made up for a lot of rough vegan food in chile. And it's cheap for the value.

Everything is amazing. The menu, the execution of the plates, the ambiance, the staff. Philippe, the owner/operator, really cares about his customers and staff. He packages his worldly-views into a local cuisine that is as unique as it is delicious and healthy. Basilic Bistrot seems like it could have been plucked out of p Berkeley, CA, Boulder, CO, or Portland, ME, then adapted to its setting in Coyhaique. It is a real gem in Aysen. Ate here four times in 3 days.
