Mountain Dining can be a bit tricky to access, especially since it's located behind the gated community of Cordillera. However, the team here always delivers a consistently enjoyable experience. I’m a big fan of the clubhouse and the golf course, and having lunch here is truly a delight. When I reflect on it, it's an unexpected and delightful gem nestled in such a remote area.

Although we only intended to have drinks that evening, I was reminded of how good the food is from past experiences, so we planned to return for dinner the following night. The evening's special, Elk Stroganoff, was perfect for a chilly winter night. It featured exquisitely tender elk tenderloin in a rich, flavorful sauce, accompanied by three types of juicy mushrooms: shiitake, oyster, and trumpet. To top it off, we enjoyed the soothing sounds of Peter Vavra on the piano. Update: We had another delightful dinner. The salmon was prepared just the way I like it—crispy on the outside and moist on the inside. Its presentation was stunning and just as enjoyable as the taste. The salmon fillet was served atop a creative bed of finely shredded, crispy sweet potatoes, with adjacent butternut squash puree accented by three small, slightly spicy Peruvian sweet peppers. On either side of the salmon, sautéed Brussels sprout petals added a delightful crunch, and the dish was beautifully garnished with a few sprigs of parsley and delicate pea shoots. I made sure to save room for dessert, choosing one of the rotating soufflé options. The soufflé here is light and fluffy, with a liquid center and a warm sauce drizzled on top. Tonight’s flavor was banana with rum caramel sauce, and it was absolutely divine! Thankfully, I saved room for it!

The food, service and ambience in this restaurant are all excellent. It's my favorite place in Vail for dinner.

The food here is amazing. I've visited several times and have never been let down by anything I've ordered.
