Who remembers, or rather doesn't remember the famous Yamato in Ixelles? A true Japanese Ramen, widely attended by Japanese visitors to Brussels. Unfortunately, he had closed his doors at the end of 2014, with his owner Mr. Kaori Yamato taking a deserved retirement. Well, the restaurant Ramen Yamato is reborn from these ashes. I'm going to be honest, it's been a year since Shigenobu Kato the leader of the Menma created this second restaurant, but I haven't found the time to come and test it yet. Shigenobu, wished to remain in continuity with what made the success of the Yamato. Shigenobu Kato who uses 100% flour in Menma, uses 100% Japanese flours from the Kotobuki brand. A soft type of flour, with a white colour and smooth texture and a low gluten content. The noodles are also finer than the Menma restaurant. The broth is more chicken-based. The map remained the same, so the nostalgic of the Yamato fire will be in the new Yamato. The Gyoza are simply excellent, they are prepared on site as the meat is gout. Verdict, the new Yamato is a continuity of the old. We find the taste, the same atmosphere.
