This place had amazing flavors! They are in a super prime location and I hope they get to open their rooftop without a hitch. There's a ton of ambition behind the employees/owners and I hope this place can go far. The cocktails were made amazingly and service was prompt enough. I only have a couple of complaints... 1. There was an abundance of garlic for me and even my wife who loves garlic. 2. My grilled octopus was overcooked but, the flavors on the plate were so good I didn't care. 3. Remember that you're a new restaurant and you have a good team behind you. It takes time to make gold into a ring. Sometimes all you need is to take a deep breath, regroup and do the best you can.
The waitstaff was excellent, but unfortunately, Mother's Day brunch was a complete disappointment. It took over an hour for our food to arrive, and the soup was only lukewarm. The chicken and waffles were overcooked and dry, and the toast was missing important toppings. Additionally, the kale salad lacked hearts of palm and basil. Our waitress was attentive, but she was managing the dining area on her own while also mixing drinks. Although the restaurant is new, these are fundamental errors. The chef needs to address issues in the kitchen, and management should ensure proper staffing. We left feeling very disappointed.
We started with the special—perfectly grilled octopus served with Romesco sauce, olive tapenade, basil gastrique, and a delightful carrot and butternut squash puree. It was incredible! We also had the pan-seared tofu with Farro, which was simply amazing—beautifully plated and thoughtfully crafted. The chef ensures each dish features a variety of layered textures and flavors. Our friends enjoyed the short ribs, and we all indulged in the Italian budino for dessert, which was a highlight. The selection of beer and wine was excellent, too. This place offers fine dining within an artistically designed space. I can't wait to dine on the deck. It's a must-visit. This isn’t your typical Fort Collins pub food or trendy eatery—it’s a bit on the pricey side, but I’m definitely looking forward to returning.
Wow! I have to admit, I didn't have high expectations when I first checked out the restaurant, but I was genuinely impressed after dining there. Every dish is expertly prepared and beautifully presented. Even the basic Caesar salad looks like it belongs on the cover of a gourmet magazine. Nothing here is bland or boring. The onion rings are exceptional, and the Aubergine Caponata is so flavorful that it might convince you you're eating beef. Even their metro options are a cut above the usual fare. This place is definitely worth a visit. Although the location isn't the most convenient and parking in FoCo can be a hassle, don't let that deter you!
