The atmosphere is consistently calm and peaceful, which we love. Sitting at the bar allows us to watch the food being prepared right in front of us. Jaimie, the recently promoted assistant kitchen manager, has taken care of our meals during our last three visits, and she's been absolutely fantastic. We've never left feeling disappointed, and Jaimie truly is one of the Welsh Rabbit's hidden treasures. We also appreciate the specials they offer and the creative freedom given to their chefs to come up with unique dishes. I would wholeheartedly recommend this place—10 out of 10!
I opted for three cheeses (Gouda, trufado, and wine goat), olives, house-made wine jelly, and a baguette. When I ordered my wine, the server generously offered a sample and then informed me about a happy hour Sauvignon blanc, which happened to be my favorite. So that was a nice coincidence! My total for the wine (half-price during happy hour) and cheese board items came to $35—not bad, though I wished there had been a bit more cheese. It took a while to put in my order—perhaps the server was giving me extra time to look over the menu, but I was ready and HUNGRY. The cheese was delicious, but the portions were small compared to other options I'd seen in Denver at a similar price point. I was surprised by the $4.50 price for the same ounce of Gouda compared to the trufado. The baguette was quite hard but had good flavor once you got through the crust. All the olives had pits, and while they did provide a pit container, I would have preferred marinated olives that could be easily spread on the baguette with the cheese. The house-made wine jelly was very flavorful (currently featuring watermelon), but its texture was quite runny, with water pooling at the bottom of the container. It didn’t have a jelly-like consistency at all and was much thinner than a typical spread. Perhaps due to the time of day, things got busy quickly, and with only one person preparing meals, another handling cheese boards, and one serving, the service was a bit slow. It took a while to get my check after finishing, but since I wasn’t in a hurry, it didn’t bother me too much. Still, having more staff could have sped things up, especially since it was 3 PM. At around 4 PM, a manager came in to assist briefly but then went outside to dine after opening more tables for service, still with only three employees working. I noticed some reviews mixed up the cheese shop and the bistro, but overall, the feedback is positive, and I would agree. Service is crucial, especially in such a niche market, as some people may want to be in and out within an hour, particularly if dining alone at the bar. I would definitely return, as there’s a vast array of cheese and wine options from around the world. There’s always something new to try!
We had a wonderful time at this downtown Fort Collins restaurant that specializes in wine and charcuterie. While the atmosphere is somewhat outdated and lacking in character, the service was outstanding. We particularly appreciated the carefully curated selection of meats and cheeses from various regions. The wine list is quite impressive too, offering a variety of excellent options at different price ranges. It’s definitely a great spot for a late afternoon happy hour.
Love this cheese shop, the staff was so professional and helpful. We got the platter and every single item is absolutely delicious!
