I have been a dedicated fan of Snuffer’s since the mid-1980s, when Pat Snuffer himself was in charge. The burgers, the ambiance, and those legendary cheddar fries were the essence of the restaurant. Regrettably, everything began to shift after the 2013 bankruptcy when Firebird Restaurant Group, the owner of El Fenix, took over. This move was not just a change in ownership; Firebird aggressively pursued Pat Snuffer, compelling him to close his other businesses and effectively erasing his footprint from the Dallas dining scene. The menu, once brimming with unique offerings like spinach quesadillas and the beloved burger of the month, has been severely diminished. In 2021, they introduced odd items like meatloaf with a sweet ketchup glaze and mac and cheese, which felt forced and out of sync with the restaurant’s tradition. By August 2024, the menu had been reduced by 70%, while prices have skyrocketed. Cheddar fries are now available in just two sizes, costing as much as $17 with toppings. Fried mushrooms are offered in a single size and feature a breading that doesn’t resemble the original flavor. The once-cherished burgers are now served on stale, thick buns that lack the signature poppy seed taste. The crispy chicken, now tough and overly breaded, further underscores the decline. The Greenville, Texas location is in disarray, with dust and cobwebs accumulating on the blinds and windowsills, and the bar area visibly neglected. It’s disheartening to witness a place that once exuded so much charm and nostalgia being allowed to fall apart. Firebird Restaurant Group has taken what was once a beloved local institution and transformed it into a mere shadow of its former self. Snuffer's deserves so much better.
What else can I say about Snuffer's that hasn't already been said? It's simply one of the best burger and loaded fries combos around. The fact that Snuffer's has tasted the same for over 20 years speaks volumes about their consistency. They always deliver an outstanding experience for me.
Kid-friendliness: Kaydence was a great server, and took care of our family like a pro.
After sitting with a friend for 20 minutes without being greeted or acknowledged at all, and another friend who had been sitting there waiting for almost half an hour just to pay, we walked out. The service system needs a massive make over or this restaurant will not survive. 1. Self seating only works in tiny hole-in-the-wall restaurants that only have 3-5 tables. Larger places with big tables need hosts or servers seat them at tables appropriate to the party size. 2. Train your Servers! Don't let them wander about! Servers need to have a layout plan: what tables are they manage, what part of the service are the customers in of their experience. Effective flow systems gets customers in, served, billed, paid, and out the door so the process can repeat. Time is money. 3. Having a host/ or hostess at the register can keep people from being ignored or walking out without paying. Having a register unmanned in the open is also not smart. If your business provided a service to it's customers, I'm pretty sure you expect to be paid for the work you did. The inside of the building has a great atmosphere and has potential, but if the service system doesn't fix the flow system on the dining floor, this restaurant will not survive.
