Porko's BBQ - Guadalajara

Costillas al estilo Texas, elaboradas de forma artesanal (8 horas o más de proceso), atención directa por parte de los propietarios, el BBQ lo pones a tu gusto y tienen un sabor ahumado, muy cercano al tocino. Incluye guarnición de puré de patata y elote amarillo. La cerveza es súper fría, como debe ser. Una verdadera joya de la ciudad. Solo intenten reservar o llegar temprano porque se agotan, y como dato: solo abren los viernes y sábados debido al laborioso proceso de elaboración, pero verán que vale la pena la espera.

Porkos has moved to the Providencia region of Guadalajara. We were hoping to have a great BBQ. They open around 3, we came around 3:40 and most of the chairs were still on the tables, but we could sit at an open table. We were the first customers of the day. We got a menu with MANY things that have gone out. We could choose between pulled pork, wings and ribs. 2 of us 4 ordered pulled pork sandwiches, 1 ordered wings with one side of potatoes and 1 ordered loaded frits with pulled pork, cheese and bacon. Our drinks arrived immediately, and the sandwiches came in a slow but not inappropriate time. The sandwiches came and the staff were all in other parts of the place. The two people almost finished their sandwiches before the side of the potatoes arrived. We asked about the wings and the fries. They're coming soon. The sandwiches and Cole Slav were good, and the side of the potatoes was pretty good. They were gone long before the wings arrived. Again we asked about the Fritten. The server seemed surprised that we had ordered something that had not yet come. About 10 minutes later, another employee came by and I asked for my fries again. Within 5 minutes, 2 orders from Fritten arrived. We only ordered one, so they took one back. The loaded pommes were fine. Maybe the ones they had left were prepared a while ago as the Fritten were mushier when I had expected. We really wanted this place to be good! We sent reviews on the Facebook page and got the answer, there are more bbq places in Guadalajara that you can try to thank for your visit. No excuse, no explanation other than it is not a fast food place (what we knew it was 't). Basically, eat somewhere else. We will.
