A business appointment led my wife and I back to Leine Metropole after one, two years and was looking forward to a nice evening at Hindenburg Klassik. When we arrived at the Hindenburg Classics in 19:30, we were kindly greeted and guided at our table in the back, quieter area of the restaurant. Maurice immediately discovered us, greeted us cordially and briefly brought us the handwritten map and asked us about our drinks. Two glasses of champagne should be there and they came soon. Since classical music is always freshly bought and prepared in Hindenburg, the offer changes regularly and there are always interesting recommendations outside the map. We both decided as an appetizer for the first-class, tastefully perfectly matched lobster soup. A dream. Could not be done better on the east coast of the USA. As second equipment, my wife and I shared the Beef Tartar, which was also distributed in the kitchen on two plates (which is very practical as you do not have to start by yourself) The tartar was perfectly the right composition of meat and ingredients you desire. So much freshness is rarely found on his plate. I almost liked to eat it alone... But there was a third course and therefore our main dish: chop calf with Mediterranean fresh vegetables. The meat is delicate, yet pink and well equipped with the right spices. The wine card is tastefully selected, but here you can also rely on the recommendations. In the meantime, it was quiet in Hindeburg Classic and we were hopelessly happy. There was only one diligent. Here Laura told us the new, really nice service. I have my Williams Bear right away... Now we wanted to settle the bill, but you didn't want to let us go so easy and bring another 2 glasses of champagne to the table. Maurice and Gloria joined us and told us more about their gastro philosophy. It is not only about excellent cuisine, which in principle is self-evident. No, they're supposed to be friends here. The fact that this also applies to the staff was immediately clear. Maurice took a special bottle from the basement and invited his employees to join.
