Quiet family style restaurant. Menu is extensive ranging from many chicken, pork, steak, seafood choices (4—5 menu pages). Served with fresh chips salsa before meal. I ordered a chicken fajita chimichanga, it only came with chicken cheese inside no red or green peppers or onions (kinda disappointed). Overall not bad but not for me

My girlfriend Maggi and I were riding motorcycles on our way to Santa Fe, NM from Kansas City and we decided to stop in Liberal KS for the night. It was about 5:00 when we decided we wanted Chili Rellenos and found the Vargas Restaurant made them. Very polite service but the food wasn't the best. Price didn't equal the value of the food

The food was pretty good. And the service was OK. And while the place was not filthy it looked like it could be cleaned better. The air conditioner was not running so it was hot in the building.
