Inspired by a pizza pilgrimage by two English friends who are now the owners, the Nduja pizza at Pizza Pilgrims is considered a must-try pizza worldwide. Starting with just some credit cards and the back of a Piaggio van, this pizza chain now has 6 locations in London. The brothers learned the art of pizza making in Naples, where they discovered Nduja, a spicy Calabrese boar sausage that has become one of their signature dishes. Made with 50% boar and boar whey and 50% spicy Calabrian chili, the Nduja has a unique flavor. The dough is kneaded, not rolled, giving it a soft texture and charred crust. The pizza has a center that is so deliciously gooey that the cheese may slide off before you can finish it. The taste is out of this world, with layers of flavors from the tangy tomatoes, spicy Nduja, and creamy buffalo mozzarella. The combination of sweet and spicy flavors is perfect, and the mozzarella adds a lovely balance to the pizza.
