Ironically, this is a chorría that he does with gluten Churros so that it is not a dedicated kitchen, but I never had a bad experience because he and his workers are all so conscious and so cautious. If he knows you're celiac, he'll be very careful. Since he has been living in Los Villares for 20 years, everyone in the city is very aware, gluten-free foods and how to cook them safely. Most places have GF bread and beer and they will tell you where cross-contamination risks are.
