Pallubasa is a traditional dish of Makassar, South Sulawesi, Indonesia. Just like Coto Makassar, it is made from slaughter of cattle or buffalo. The cooking process is similar to Coto Makassar; the interiors are cooked for a long time. After cooking, the dish is added to meat, then cut and served in a bowl. What distinguishes Pallubasa from Coto Makassar is its spices that are specially formulated. Pallubasa soup tastes creamy and rich due to the addition of salted grated coconut. Coto Makassar is eaten with ketupat, while Pallubasa is eaten with a plate of rice. Pallubasa Serigala in general is a must in Makassar, the place was spacious and always crowded with customers. My favorite was the grated coconut that we can add to the Pallubas what we want. Mantap!
Great local comfort food. The broth was extraordinary good. And the meat quality is superb. Moist, tender and juicy. The portion was not big, that's why they provide two plate of rice as a default. But one was just enough to comfort my tummy. Ow, don't forget to ask the egg topping to add more flavor to the broth. Perfect!
Taste good! Lots of meat Reasonable price Difference from coto is pallubasa is thicker and they have some grated coconut in the soup so the texture is a bit different But we should tried to eat the one with eggs.. We forgot to ask for the egg.. They gave big portion of sambal! So those who like spicy food can add a lot of it
