Koyotes Tacos - Monmouth

Where to begin. This is a cute joint and my first time. I ordered enchiladas that were served with a cup of extremely salty enchilada sauce. Taste like can sauce. The crock pot beef was just so so and did not taste fresh on Oct 4th but the beans and rice were good. With so many excellent Mexican places in independence and Monmouth I will not be returning. Way too much salt on everything. Over powered any possible good flavor. I have a bad taste in my mouth. College kids won’t know the difference and this place probably relies on the students for biz. This place has the best food hands down. It’s always fresh and affordable. The staff are very nice as well. Would recommend to anyone. Parking: Always a place to park even when busy.
