This was our first time at Spanish Tavern, and with all the options available in Newark for great Iberian seafood, it was a challenge making a decision. We arrived in the Ironbound 5 minutes late (Devils game that night: be advised that rush hour can be slow , but there was a parking lot directly across from the restaurant with a pleasant and helpful attendee (you park the car yourself . The host greeted us quickly and seated the three of us promptly. The waiters who attended us were kind and professional gentlemen (old school: they didn't hand out menus until we all were seated, didn't interrupt our conversations at any point; I like that . We had 3 appetizers (be aware: two would be plenty for three hungry adults : croquettes (magnificent perfectly cooked , baked clams (also well done , and chorizo (delicious, but to be fair, chorizo is easy to do if you're using high-quality meat, which they were . The food was top notch. Paella may seem like a standard Spanish fare, but most paellas I have had were mediocre. A place that honors paella recognizes that you don't throw all the seafood in at once so that the shrimp and scallops get overcooked, for example. Instead, everything here was cooked to perfection. Two of us had paella marinera, while one had the rice-encrusted fried shrimp (which was good, but fried shrimp is easy to get good, as long as you don't overcook it . We were full by then, but having such a good meal, we thought we'd check out desserts. Creme brûlée was spot-on; flan was exceptional (not very sweet, with a very charred sauce; if you want yours sweet and caramelly, skip this because it leans into deep flavors ; but the chocolate (fudge? cake was just about the best I've had (dense and chocolatey, with no hint of dryness that large-crumb chocolate cakes get. Throughout, as I hinted at above, the wait staff was exceptionally good, and not just friendly, but professional in the European tradition. From top to bottom, a high-quality experience
