For the best in local, fresh, natural cuisine, this is a dream come true. Nestled in the hills, with a cozy, unpretentious ambiance, this restaurant offers an impeccable assortment of homemade dishes, integrating the very best in local ingredients: truffles, ceps, herbs, vegetables, chestnuts, fish and lamb. You will not find elaborate recipes full of improbable combinations — the Auberge instead relies entirely on the honest flavors and quality of the terroir, and it brings them, undisguised and perfectly prepared, directly to your table. An incredible find that reminds one of what really makes for wonderful cuisine.
As I was driving today from St Félix-Lauragais to my destination for a wedding tomorrow, I noticed this lovely auberge on the side of the road, and since it was lunch time, I decided to stop! What a good idea! I ordered a 'truite de Salvetat pochée: ( poached trout from the area, in a wine sauce and fresh vegetables in season) it was very good. Then I had a homemade 'mousse glacée aux fruits exotiques' a kind of icecream with a fruit coulis, also nice. I ate on the terrace under a sunshade, service was friendly and attentive, perhaps not fast, but I was in no hurry. I would stop there again if I was on that road again.
Our third visit in 6 weeks and not the last. The Truffle menu was delicious. When questioned about the truffles, on a previous ocassion, the young waitress said her grandmother had picked them that morning. The food was well cooked and presented as well as delicious. Dining among the trees was a lovely experience. Roll on the next time.
Charming to look at, comfortable to be in with charming staff and excellent food. We can't wait to go back in the winter. Lots of choice and good value for money.
