Black Ramen has become popular as specialty of Toyama, and we see more shops opening, but for many adult tourists, it is a place to go for experiencing the thrill of the blackest and the saltiest food once in a lifetime, and for all. However Nakajima-san here has created something from a different dimension. He has followed the very original recipe of Black Ramen, combined it with the techniques of making Kaeshi , the dip for soba, at one of the most famous and traditional soba restaurant. The result, it of course is salty to some extent, but the aroma and flavour of dashi stands out, making it a ramen that I want to revisit and eat. Oh, the selections of local sake served here is good, too.
Recommended course, B course 3,000 yen (3 dishes of Oyaji Omakase, 2 glasses of Asahi Brew), sake local Yoshinotomo 700 yen, black ramen 1,000 yen Izakaya on the 1st floor of the Yoi Building in Yukimachi, Toyama City.
