Fish with cauliflower cream, pleurotes persillade with egg parfait and comté/parmesan crumble... Wahoo, so delicious. Step away from the crowd, and treat yourself there blindly

Very good cooking, inventive and healthy but too much waiting and it is too cold to enjoy the very good dishes. An hour, is it a little long, isn't it between the entrance and the suite? I'm really too long.
