I was most likely the pan roasted fish with lavender risotto. the chef gilberto was very sweet and came by and spoke to us and explained their portable set. the Nomad team travels to small wine mountains and hotels to eat their kitchen amazing. we had dinner in laja, the day before, and can boldly say that gilberto can kick her back. He's so good. So if they are looking for the ultimate gastronomic experience, they are definitely trying nomada. I can't go enough about this place. hidden gem!
Have been following this young koch gilberto morales for some time, the creations are always unique, fresh and exciting to try this time to not let us down, we had a sampler menu that showed the teams talented and my children had a...unique dish on their own faust. the Lavender butterfish almost melted in the mouth, the lamb shed (probably only not locally) were still amazing. the start-appetizer trizoto a couscous as rendering the name-cake bowl was an interesting mix of aromen and textures. but all my hands down must be the ceviche! the only part is that is just here on temporary basis and will appear somewhere else the guadalupe valley next year.
The restaurant is amazing and the place is fantastic. we are vegetarian and they made a whip of red wine, I think, and it was so delicious. everything that's wonderful.
Nómada “the travelling kitchen”. Came across this discrete tiny restaurant tucked away in the gorgeous mountains of Ensenada during my stay at Cuatro Cuatros. Executive chef, Gilberto Morales, took us on a gastronomical journey which may possibly be the best meal I’ve ever had...on the West Coast. His conviction in subtly infusing local ingredients with contemporary Mexican fare makes him an Allstar Chef de Cuisine! Hats off to Gilberto and his team for sharing their amazing culinary skills with us!
I was blown away from maize removal, our table finally ended the order of 3 of them, then on a wonderful meal with ingredients from the indigenous peoples of baja as well as some beautiful regular Mexican dishes. I want to go back.
