Unique, original, above all, mindblowing ramen that originated from Toronto, Canada. The white broth is the result of cooking the chicken parts that are high in collagen for long hours at low heat. Although creamy, the concentrated soup is surprisingly not heavy due to the sweetness from the vegetable potage. You rarely see chicken breast for ramen topping because of the delicate nature of the protein, however, the chashu on top will be the most succulent pieces of breast that you will ever have.
I entered the restaurant with no information whatsoever, just drawn in by the appeal of their chicken paitan. It was delicious. Having frequented the renowned Tenten-Yu in Kyoto's Ichijoji for their chicken paitan, I expected something similar, but it turned out to be quite different. I ordered the RYUS chicken paitan ramen. The soup had a unique sweetness from sesame that paired perfectly with the straight, thin noodles. The aftertaste after finishing the soup was wonderful—there's a lingering sensation that feels just right. By the way, I couldn't quite read the name of the restaurant. Is it "Sassou no Satsu" or perhaps "Menya Satsu?"
