The menu has a section called “vegi-mex” with one clearly labeled vegan dish while the others could be modified. The staff usually understand the word “vegan,” but I usually modify it myself to be clear. The Mexican rice has chicken stock, and the refried beans are not vegan. People will forget that chicken stock is not vegan (especially in Mill Creek, where the word vegan barely exists) so be careful. The refried beans being vegan varies by location since I know someone who (used to) work at the Mountlake Terrance location, and she verified they are vegan, but she also knows each location makes them different. I do not go out of my way to have Azteca, but it’s a decent option, especially compared to the other big Mexican restaurant in the area, “La Palmara” which doesn’t label vegan items.
