2017: I researched new and unknown root vegetables. A new one I found yesterday was parsley root. It looks like a carrot, except white. It has the crispy texture of a carrot and has a bit the taste of a carrot and much more. What a wonderful addition to my healthier lifestyle. The last I found was Kolhrabi, and I love it! Like a radish, but in my book much better. Matt working in the kitchen in the mill is such a wonderful teacher in production. He works on coos head co-op as one of their products. I enjoyed learning about vegetables and fruits that I would have just given a look at and then gone. I realized I missed so much in the food and taste world.
