Since I have been in Frankfurt on a regular basis and I have seen how many of my colleagues on the ground are also hotel dwellers, I am no wonder how much medium-sized you can survive as a restaurant. It simply needs to be sufficient for guests who don't care if they don't come back again, or if alternatives are lacking, they just come back. A good example is the Trattoria Florian. I think it's good to think that once we've been working with good intentions. Unfortunately, only too much remains of this. From the outside, the incoming guest offers an image of warmth and cosiness. Damped light and candles penetrate through the window front and announce hospitality. The feeling is preserved even after entering the Trattoria. The boss is just busy with the table assignment to a lady who arrived in front of me. I am greeted by another waiter and I will be offered 3 different small 2 tables to choose from. It is obvious to the many travellers, men and women, who earn bread in the distance every day (is already positive). In the rear part on the opposite side is the kitchen, also divided by a glass front. Everything is kept in reddish brown tones and looks invitingly cozy. The glass front to the kitchen provides a little more light on this side and so I choose a table there to have more light on the one hand to devote myself to my food accompaniment, a nice novel about cooking and life in itself, and at the same time to take a look into the kitchen that comes quite small, but very neat and organized. For the ambiance I like to give 4 stars After I sit, a waiter comes to me quickly, who will also serve me for the next evening. He is polite, but I don't want a sense of wellbeing in his presence. The menu will be handed over to me and also immediately asked what I would like to drink. Nothing yet, since I wanted to decide what it might be of solid food. So the waiter quickly went back to his way, just to ask if I already know what I want to drink. No, I still didn't know, because I haven't even been through the menu yet. He then drilled on with a little pressing emphasis, there would be other things than those named in the map, and now listed the dishes written on a mirror panel on the wall. However, none of the daily dishes told me so that the waiter reads me again (very short time at rest). When he was back with me, I ordered a Vitello Tonnato (10.50 € and wanted to order a pasta as the main dish. The choice on the map was not so much (I know I am a difficult guest, so I asked for Spaghetti Carbonara (7.90 €), which the waiter liked to take. My addition no cream was acknowledged with no cream. In addition, I ordered a glass of Pinot Grigio from the winery Vino from Tavola ; (approximately 0.2l 4.50 € unfortunately no luck grip, rather flat and nothing-sounding The small bottle of water (Gerolsteiner 0.25l 1.80 €, which I wanted to order, had to wait a bit, as the impatient waiter at the ...gio of the wine order was already 2 meters far away. It didn't take very long, then the drinks stood on my table without words. Just as quiet were bread, olives and almost at the same time (I had not even time to take the first olive served the appetizer. When clearing, then the short, almost rhetorically asked question is all wonderful? which I answered with “was OK” probably without being perceived. The main dish was also served wordless, and with the new question everything wonderfully cleared the dishes. After all, my criticism was taken this time and, as I come along, also passed on to the kitchen. The espresso I ordered at the end went to the house, I suppose as compensation. Although positive approaches were noticeable, the overall impression of an impatient and slightly grouped service prevails. However, the espresso and the flexibility in past delivery save the 3rd star. The food: As a greeting of the house came white bread, olives and fresh cheese. The bread (3 thin slices was unfortunately neither crispy fresh, nor baked, nor any other noteworthy. Also the olives (green, de-stoned were rather average supermarket goods, as well as the (very small Klacks fresh cheese, which a la naturel therefore came. The Vitello Tonnato, virtually at the same time with bread, olives and cheese, was a sample of extremely minimalist dressing. The plate with the slices of veal, thinly covered with the tuna sauce, 4 sweet lost capers and a large buffalo Lolo Rosso in the middle of the plate. The meat was a bit too dry, but tastefully fine. The tuna sauce was somewhat too liquid and majo heavy. I like it better with a bigger Thun share and maybe some more anchovies. I'm sorry. The capers were edible, but brought too little acidity into play (which was unfortunately not absorbed by some lemon). All right, but I wouldn't order this again. The spaghetti Carbonara came as desired in the cream-free variant. The bacon was cut into short strips, not cubes (so I like this and not too dry or too long roasted. On the edge there was something (something could also be a little more parmesan, and the use of freshly ground black pepper was well done. This was also the positive one. Unfortunately, the egg was not only pulled under the pasta at the end, but was already so strong and crumby that I was expecting it to be in the pan for a while (more like red noodles). They were more of consistency than my mother used to cook noodles, teeth were more unnecessary. It could have been a nice dish, the approaches were there, but the basics were badly failed. All in all, I can not give the kitchen more than 2.5 stars. By the way, the espresso was extremely hot (also the cup, and resistant to strength and taste. Price is in the middle field. If the food was good, I would like to have 4 stars. That's close to 3. Cleanliness: In the restaurant and in the kitchen (if I could see it through the pane next to my place, there was excellent cleanliness. I did not visit the sanitary facilities 5 stars
