I regularly eat in Catillon during my walks in Moléson for its regional and local cuisine. What was my surprise when we take the burger. The waiter tells us that it is with cuchaule from Valais . First La cuchaule has an AOP. So in no case is it a cuchaule if it is produced in Valais. Secondly, it seems to me that there are many bakers in Gruyère who produce the real cuchaule AOP, why buy from Valais? And finally it does not seem to me that we can consider the Valais as regional . In addition, your burgers were much better with the cuchaule AOP, as before... Fortunately, there is still Plan-Francey which makes burgers with the real cuchaule AOP.
