Been coming to Philippines for over a decade.. always said, if you could combine Philippine flavours with decent produce/meat, you would have a winner. Well guess what, I just found such a place... The Wild Juan.. kilometer 68, Tagatay nasugbu highway, Brgy Niyugan. Laurel, Batangas. head Chef Thomas Murillo has set out to do exactly that, combined with a western bent. It 's hard to write because my taste buds still going Kapow! after Chef and restaurants signature dish.. Gumbo Bulalo a chunky beef shank stew, with bone marrow in spicy gumbo sauce.. SSSH, the garlic rice was so light and fluffy, and flavourful, I almost didn 't want to put the amazing gumbo sauce on it!! . Awesome views over the volcano valley, plus great beer bar , really clean CRs and restaurant, supported by very friendly and professional service from Captain Royette Bautista.. Great sound system to top it all off. loads of love to this great find, SARAH H

Definitely coming back for more Gumbo lalo is the bomb Pineapple Glazed Pork Belly !!!!! yummy spicy pineapple dip) Enjoyed the sourness of the Honey Calamansi Juice Variety of beers!!! With awesome packaging Very courteous and kind staff! the owner himself is very hands on) It was indeed a hidden gem in Tagaytay!
Come here hungry and if you're not, you surely will be after looking over the menu. The area is known for Bulalo, because the area boasts some of healthiest cows around the Philippines. The Gumba Lo is an extremely tasty version of Bulalo. Perfectly seasoned and incredibly tender beef. The original Bulalo is also of exceptional quality. Leave room for dessert the cashew (from Bataan) tart and calamansi brûlée duo dessert is a must. Then you have a great view overlooking the volcano while enjoying the pleasant outdoor weather. Hats off to the staff, who remain attentive to all your needs and take the time to explain the intricacies in each dish. Kudos to the owners for creating this delightful place to make a memorable trip up to Tagaytay.
Definitely worth the trip! I wanted to bring home 10 servings of their shrimp poppers and consume it like popcorn. This is also the place to eat if you're a big fan of cashew. We tried the cashew kare kare and it was delicious. The service and the chef are great fast and accommodating.
