Delicious raw with aromatic herbs, or cooked used in bards... Fameux piece for me, known in Auvergne and Languedoc under the name Carron, and in Italy as Lard de Colonnata.
I strongly recommend, succulent and fine dishes in the mouth, very kind bosses. His kir aperitif with chestnut was very good. Bravo to the chief.

I had booked for 2 via the The Fork app for the 30 years of my spouse. On the application the restaurant was indicated as being open, I was able to book without any problems. Unfortunately, when we came, the establishment was closed... The surprise we had was not the wish ahah. The next day, I call the establishment to warn them that the application had not been updated, the purpose being not to blame them but rather to avoid that it happens to other customers. The man on the phone tells me that the application had been updated and that she had just forgotten to send me a notification of cancellation. Little cordial exchange and quite expedient, no excuses either...
