Café Diva has long been our favorite in Steamboat Springs. Last night was anything but our favorite. While our service was a little slow over ½ hour between appetizer and entree, the parties around us were getting their food much faster, and their service seemed much more attentive. Our waiter was good, but appeared to be Über busy with other tables. The appetizers were really good we should have stopped there. Great Duck confit, chef’s soup, Tuna, etc all winners. Entrees not so much 2 lamb shanks in our party, both said it tasted more like stewed meat than lamb. I like both French Onion Soup and Beef Tenderloin, but I did not like the flavor combination, and my tenderloin was medium not medium rare and the “cauliflower mash” was chunky not like a mashed potato as expected. The Scallops were over salted. Lastly, the Cacio de Pepe, a traditionally very simple dish, was over modified with several additional veggies not what we expected. Overall, it was a disappointment.
The restaurant isn't the same since Paul was the owner and greeted everyone. I tried calling twice and left a message, but no one returned my call. We arrived 30 minutes early, and there were 3 available tables. The GM told us to go to Slopeside for a drink and come back. When we returned, two of the tables were still open. Paul would have gotten us drinks and never let us leave. The food is delicious, but the charm that made Diva what it was is gone. I can't help but think that many locals feel the same way and are not coming back.
Delicious and creative dishes I recommend if you are looking for a place with something different.
We had a fantastic dining experience on the mountain. Our server was well-informed and friendly, and the food was absolutely delicious. It would be nice to see a few more wine options under one hundred dollars. Overall, it was a wonderful evening.
